Baked Zucchini Bites

Ingredients

  • 2 cups shredded zucchini (moisture squeezed out)
  • 1-2 cloves garlic, minced
  • cup small breadcrumbs (panko style)
  • ½ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp dried basil
  • 1 tsp dried Italian seasoning
  • ½ tsp garlic pepper seasoning (or salt and pepper)

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper, a Silpat mat, or spray with non-stick cooking spray.
  • Grate and drain the zucchini well.
  • Add all of the ingredients to a large bowl, and mix well to combine.
  • Shape into 1 to 1½-inch balls and place on the prepared baking sheet, at least 1 inch apart. Makes around 24 balls.
  • Bake for 15-18 minutes, or until the bottoms are golden brown.
  • Serve with your favorite dipping sauce or spaghetti sauce.
