Baked Zucchini Bites

- 2 cups shredded zucchini (moisture squeezed out)
- 1-2 cloves garlic, minced
- ⅔ cup small breadcrumbs (panko style)
- ½ cup grated parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 tsp dried basil
- 1 tsp dried Italian seasoning
- ½ tsp garlic pepper seasoning (or salt and pepper)
Preheat oven to 400°F. Line a baking sheet with parchment paper, a Silpat mat, or spray with non-stick cooking spray.
Grate and drain the zucchini well.
Add all of the ingredients to a large bowl, and mix well to combine.
Shape into 1 to 1½-inch balls and place on the prepared baking sheet, at least 1 inch apart. Makes around 24 balls.
Bake for 15-18 minutes, or until the bottoms are golden brown.
Serve with your favorite dipping sauce or spaghetti sauce.
