Baked Cabbage and Bacon

Ingredients

  • 1 package bacon (12-16 ounce package)
  • 1 medium head cabbage cored and chopped
  • 1 medium onion, chopped
  • 2 cloves minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp dried oregano
  • 1 tsp dried marjoram

Dressing (Optional)

  • 2 Tbs white wine vinegar
  • 1 Tbs lemon juice
  • 1 Tbs Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  • Preheat oven to 400°, and line a rimmed baking sheet with aluminum foil or parchment paper. Lay the bacon on the baking sheet in a single layer. Cook for 5-10 minutes until some grease has formed, you need about 1/4 cup. Chop up the bacon and drain off any excess grease.
  • Mix together 1 head of chopped cabbage, chopped onion, minced garlic, bacon, 1/4 cup of bacon grease, oregano, marjoram, salt, and pepper. Transfer back to the pan that you were using to cook the bacon.
  • Bake for 30 minutes, stirring once halfway through.

Dressing (Optional)

  • Whisk the dressing ingredients together. Drizzle over the cabbage mixture, and toss to coat. Serve warm.
