Baked Cabbage and Bacon

- 1 package bacon (12-16 ounce package)
- 1 medium head cabbage cored and chopped
- 1 medium onion, chopped
- 2 cloves minced garlic
- ½ tsp salt
- ½ tsp pepper
- 1 tsp dried oregano
- 1 tsp dried marjoram
Dressing (Optional)
- 2 Tbs white wine vinegar
- 1 Tbs lemon juice
- 1 Tbs Dijon mustard
- ½ tsp salt
- ½ tsp pepper
Preheat oven to 400°, and line a rimmed baking sheet with aluminum foil or parchment paper. Lay the bacon on the baking sheet in a single layer. Cook for 5-10 minutes until some grease has formed, you need about 1/4 cup. Chop up the bacon and drain off any excess grease.
Mix together 1 head of chopped cabbage, chopped onion, minced garlic, bacon, 1/4 cup of bacon grease, oregano, marjoram, salt, and pepper. Transfer back to the pan that you were using to cook the bacon.
Bake for 30 minutes, stirring once halfway through.
