French Onion Rice Skillet

- 1 Tbs butter
- 1 small onion, thinly sliced
- 1 lb lean ground beef
- 2 cups cooked long-grain white rice
- 1 can french onion soup (beef or veg. broth) if using concentrate add 1 cup water to equal 18 ounces of liquid
- 1 pkg dry onion soup mix
- ¾ cup Shredded Mozzarella, Swiss, Provolone, or Gruyere cheese (cheese of your choice or a mixture)
Saute onion in butter, add ground beef breaking up, and cook until brown and no longer pink. Drain off any grease.
Stir in the french onion soup, rice, and dry onion soup mix. Cover and simmer on Medium to Med/High stirring occasionally until liquid is absorbed and the mixture has thickened. Around 15 minutes.
Remove from heat and sprinkle cheese on top of the dish. Cover with the lid and let the cheese melt for around 2 minutes.
