French Onion Rice Skillet

Ingredients

  • 1 Tbs butter
  • 1 small onion, thinly sliced
  • 1 lb lean ground beef
  • 2 cups cooked long-grain white rice
  • 1 can french onion soup (beef or veg. broth) if using concentrate add 1 cup water to equal 18 ounces of liquid
  • 1 pkg dry onion soup mix
  • ¾ cup Shredded Mozzarella, Swiss, Provolone, or Gruyere cheese (cheese of your choice or a mixture)

Instructions

  • Saute onion in butter, add ground beef breaking up, and cook until brown and no longer pink. Drain off any grease.
  • Stir in the french onion soup, rice, and dry onion soup mix. Cover and simmer on Medium to Med/High stirring occasionally until liquid is absorbed and the mixture has thickened. Around 15 minutes.
  • Remove from heat and sprinkle cheese on top of the dish. Cover with the lid and let the cheese melt for around 2 minutes.
